Recipes I HAVE to share!

So the other day we were hanging out with the Koulouras clan and they had some bananas that were getting pretty ripe.  Chris was bugging Leah to make banana bread.  I jumped all over that because I love to make banana bread but haven’t found a recipe that Barrett has really loved yet.  (I always try to make it low fat and it drives him crazy!) So I asked Leah for her favorite banana bread recipe and she happily shared it with me.  That same night (these people are so great!) we were talking about their very cool, old school shake mixer thing and how great it is at making malts.  Ok, me pregnant + ability to have ice cream and/or malts = one very happy lady!  Leah showed off her culinary skills again by making the best chocolate raspberry malt I have ever had!  I made Barrett go out this weekend just for the ingredients because it was so good.  I thought about it all day at work and pretty much every day since!

Than we got to go hang out with Jeff and Shannon on Friday (our BFF’s) and like always Shannon cooked up some amazing dinner.  It was so delicious I made sure to get the recipe. Thank you to our amazing family for keeping Barrett, Bdub and I fully and wonderfully fed!

Leah’s Banana Bread (from a cookbook at her house)

Makes 1 Large Loaf or 4 small loafs (or a lot of little muffins!)

1/4 pound (1 stick) unsalted butter, at room temperature
1 cup sugar
2 eggs
1 1/2 cups unbleached all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup mashed very ripe bananas
1/2 cup sour cream
1 teaspoon vanilla extract (or almond)
1/2 cup chopped walnuts or pecans

Preheat the oven to 350 F.  Butter a 9 x 5 x 2 inch loaf pan or several smaller pans (I used muffin pans).
With an electric mixer, cream the butter and sugar until light and fluffy.  Add the eggs, beating well.
Sift the dry ingredients together and combine with the butter mixture.  Blend well.  Add the bananas, sour cream, and vanilla.  Stir well.  Stir in the nuts and pour into the prepared pan.
Bake 1 hour, (or 25mins if you use the muffin pans) until a cake tester comes out clean.  Turn out onto a rack to cool.

Banana Bread Muffin

Chocolate Raspberry Malt (we only have a blender not a cool malt mixer so thats what I’ll describe)

This is enough for 2 people.

Scoop 5 scoops  vanilla ice cream into blender.
Add 6 tablespoons chocolate malt powder
Add a few splashes of milk (less for a really thick shake, more for a thinner one)
Add 10 fresh raspberries
Blend well.  Pour and enjoy!
