Stella is hooked!

I think if you hung out with me for more than 4 minutes you would realize how much I love chocolate. It’s an addiction really. And one I’m ok with having! It turns out that chocolate addiction is genetic because my mom suffers from it as well as my 2.5 year old daughter! We have this favorite breakfast place, The Breakfast Club, who brings chocolate covered strawberries with your bill at the end of your meal. This place is amazing! I almost always eat mine right on the spot but usually Bear likes to take his home. I asked Stella one day if she wanted a strawberry with me, she immediately said “NO” and ran off. I swear 2 year olds don’t even listen to the question once they learn the word no! Well I knew she would want one so I said “What?! You don’t want a chocolate covered strawberry?” She immediately hightailed it into the kitchen and said “i do, i do mommy!” Well the take home container was giving me greif. I could not get that thing opened for the life of me. Not 10 secs after I started struggling with the box Stella yells out in this addict inflicted, high pitched, whine/yell “I NEED IT!” I laughed so hard it took me even longer to get the box open!

In honor of my beautiful daughter and her love for chocolate, it only seems right for me to share this delicious chocolate recipe with you.  We received this as a gift at Bear’s work Christmas party and I fell in love with the recipe.  I found it with a different name online.  The online recipe calls these cookies Cowboy Cookies.  The things that make these cookies so wonderful are the chocolate chips we get from Costco.  They are seriously the best chocolate chips I’ve ever eaten.  They are gooey and melty and chocolatey in the best chocolate chip cookie way possible.  🙂  Enjoy!

 

Working out is hard to do…

Ok SO….I’ve been struggling to add working out to the “things I’ve actually accomplisted today list” for the last week. I started off working out one day a few weeks ago, then 2 days the next week, and this week was suppose to be the week of 3 days a week. Hmm, who wants to guess how many days I worked out this week…

Well, my coworker decided to start taking the stairs as a way to get ready for his trip to the Grand Canyon. I thought “well that’s a wonderful idea”! and now we go together. The funny thing is that Joe and Zach thought it was a great idea too so now all 4 of us go down the stairs to the basement, up to 9 and back down to 7 all in a row. One time on the way down Joe tripped and scared Bill and I because we thought he was going to knock us over like dominos! Thats the risk you take when you let the 250lb guy go last I guess!That started last week and now we have all been trying to encourage each other to take the stairs more. Today I was sooo tired. I haven’t been getting that much sleep (I can’t even blame the 3 month old, she’s been amazing!) so I needed to get up and move to stay awake. I took the stairs 3 times! The last time I timed it and it took me 6 mins! 6×3=18mins! Thats kind of a work out right? After my workout 😉 I was catching up on this great blog How Sweet Eats and she posted a recipe for Banana Bread Tres Leches Cake. YUM!!! I know what I’m making this weekend!! I think I may need to hit the stairs a few more times today after seeing this deliciousness. It has fruit in it though, so its healthy right?

Merry Christmas and Happy New Year!

We have been so blessed in 2012 and I am looking forward to see what life has in store for us in 2013! Hopefully more laughter like we’ve had lately!

Stella and I love to eat popcorn! We share it as often as we can. I decided it was time for some popcorn and went into the kitchen to make some. She likes to help pour the kernels in the machine so she went to the cupboard and got them out and waited for me by the sink. My job was to get the popcorn machine out of the upper cabinet. I reached up and struggled to touch it. Stella looks over with this adorable concerned face and says “chair mommy, chair??” Haha. (No, I thought to myself, I do not need a chair to reach it thank you! 😉 She cracks me up daily!

Pumpkin Pie Cupcakes

I love fall flavors…Chai tea, pumpkin anything, cinnamon, i love it all!  This time of year I am always on the lookout for new pumpkin recipes.  I spend a lot of time on pinterest while I nurse Quinn so I’ve come across a ton of new recipes to try.  One that I found last night and just had to try today was this recipe…Impossible Pumpkin Pie Cupcakes.

They are as dangerous as they sound.  I’ve already had 3! The creator of the recipe says she likes to eat them cold.  I enjoyed one right out of the oven and two at room temp.  They were all fantastic.  I never got around to waiting for one to get cold.  They are amazing.

My only critique is that they stick to the cupcake wrappers.  Next time I will just grease the pan or use silicone liners.  Half of the cupcake gets left behind on the wrapper – which isn’t a big deal because then I just ate it off the wrapper but if you were going to serve these at a party and wanted them to be perfect that is one thing I would change.

Harvest Pizza

With a sick toddler and my due date fast approaching I am usually deciding dinner plans by how quickly I can be eating whatever it is we have decided on! Last month we got a little crazy with going out to eat because it is easy and convenient.  So this month I am gonna try to actually menu plan! We will see how it goes!

I found this great blog… How Sweet Eats.  She has amazing, unique recipes and really great pics of all the delicious food.  I saved like 12 of her recipes to try.  One that sounded too good to wait any longer to try was the Harvest Pizza (aka Butternut Squash, Sage Pesto and Prosciutto Pizza).

In keeping with my goal to menu plan, I actually made a grocery list including all the ingredients I needed for this recipe.  (I was so proud of myself!) I even read through the recipe before I got home and planned my attack on how to make it as quickly as possible!  Shocking, I know! 🙂

I made a few little changes to the recipe out of convenience.  I bought frozen, cubed butternut squash so I wouldn’t have to worry about cutting one of those bad boys up.  Bear recently almost lost his thumb trying to cut potatoes with our dull knives so I went the safe and easy route!   I also have like 3 lbs of feta from Costco that I need to use so I used feta instead of goat cheese.  It was a perfect substitution except along with the prosciutto it made for pretty salty pizza.  Oh and the most time-saving substitution was buying pizza dough from Trader Joes.  It is soooo good.  I bought the original and the herb dough a few weeks ago and froze the herb dough.  It made a perfect base for this pizza.

I started with carmelizing the onions because that was going to take the longest.  While the onions were carmelizing I made the pesto and spread out the pizza dough.  I also got all the other ingredients ready.  (I had to take cuddle breaks to love on sick little Stella.  She kept saying “Mommy, hug!” It melted my heart!)

When it was time to cook the butternut squash I kept it in the pan only long enough to warm up.  It maybe took 5 mins.  Then I cooked up the prosciutto while I started to assemble the pizza.  It baked in the 375 degree oven for 25 mins and turned out amazing.  It was so good.  Seriously-I-ate-half-the-pizza-good!

Nikki’s Baby Shower

Over Labor Day weekend I had the honor(with most of my favorite woman) of throwing my twin sister a baby shower!

It has been so much fun being pregnant together! I can’t believe in a little over 4 weeks that won’t be the case anymore!! Time is going by so fast! She is 6 weeks behind me so our little ones will get the amazing opportunity to grow up together.  If only they didn’t live so far away…

We did simple decorations.  I cut out a bunch of circles from scrapbook paper and then just fed them through the sewing machine.  It was so easy and I loved the way they turned out! I got the idea here.  I put a little more space between the circles then the other blog showed and it gave the garland a little more wiggle room.   Plus Michaels had an amazing sale on scrapbook paper (6/$1) so it didn’t cost very much at all to make.  Stella liked helping me organize the circle sizes and feed them through the machine.  🙂 I made 3 different sized circles using cups in the kitchen. 

The favors were my favorite!! I was at church one morning and we were studying Psalms when this Psalm caught my eye “Psalm 114:12a May our sons flourish in their youth like well nurtured plants” I thought it paired perfectly with the succulent favors and the fact that she is having a boy! I loved them.  We ordered some succulents from an Etsy shop called Sanpedrocactus and I bought the rest from Lowes.  They were so beautiful.  🙂

We printed out some recent photos Nikki had taken at the beach when we were out there visiting and hung those around the space.  Lastly we just kept repeating the color scheme in things like table clothes, cups, silverware, etc.

Stella was our little helper.  I helped keep track of who got her what and Stella brought the gifts to us.  She loved helping Nikki open all the gifts and cards!

Her nephew got use matching gifts! He is so sweet.  Little converse socks that look like shoes.  They are perfect!

The whole gang together! We had a blast.  I am so happy so many of our friends and family came out to celebrate Nikki, Toby and their little one. 

These are all the girl cousins that could make it and their babies with their grandma, yiayia and great grandma.  I feel so blessed that Stella has so many cousins to grow up with.  I love them all so much!
